Chocolate Discs - salted caramel, white chocolate with flaked almonds and cranberries and milk chocolate with lemon thyme and fresh raspberries

 

Transform the simplest of puddings, from chocolate mousse to shop bought ice cream, into something special. We've suggested a few flavour combinations but why not try your own. You could add lavender or chilli or freshly chopped basil leaves. Be sure to Facebook us the results!  

 

Ingredients

150g Green and Black butterscotch chocolate

150g Green and Black milk chocolate

150g Green and Black white chocolate

1 tbs Maldon salt 

a few sprigs lemon thyme

3 raspberries

1 tbs dried cranberries

1 tbs flaked almonds

Method

Prepare a baking sheet with grease proof paper or kitchen foil

Melt the butterscotch chocolate over a bain maire or in the microwave

Using a teaspoon spoon around 2 teaspoons of chocolate onto the grease proof
paper into a circular disc

Add a pinch of Maldon salt to the surface (the salt will bring out the
sweetness of the butterscotch). Continue creating the discs one at a time
until all the chocolate has been used

Next melt the milk chocolate in the same way as above.  Create the circular
discs on the grease proof paper and then add small sprigs of lemon thyme and
tiny pieces of raspberry. Continue until the chocolate has all been used

Lastly, melt the white chocolate. Create discs and add the dried cranberries
and flaked almonds. Continue until the chocolate has all been used.

Place the baking sheet in your freezer to allow the discs to set. When you
are ready to use them, remove them from the freezer and peel gently from the
grease proof paper

mel's tip: use the discs on top of ice cream or other puddings, or serve on their own after dinner with coffee
